These little fragrant cupcakes are prepared very simply and quickly without special kitchen equipment, so you don't have to waste precious summer time in a stuffy and hot kitchen. INGREDIENTS:

  • 250 g flour
  • 120 g butter
  • 2 eggs
  • 250 g natural yogurt
  • 150 g sugar
  • 1 tsp. vanilla extract or 1 pack. vanilla sugar
  • 1 pack baking powder
  • 1 tsp. cinnamon
  • a pinch of salt
  • 200 g strawberries + 1 tbsp. l. flour

For sprinkling:

  • 1 tbsp. l. brown sugar
  • wood chips cinnamon

COOKING METHOD:

1. To make the strawberry muffins, sift the flour, salt, baking powder and cinnamon into a large bowl.

2. Add sugar and mix all ingredients with a spoon. The dry muffin mix is ​​ready!


3. Place eggs and natural yogurt in a separate container. I usually use homemade yogurt, but you can use any store-bought yogurt with minimal additives.


4. Mix yogurt with eggs using a mixer, whisk or regular fork.


5. Pour in melted and slightly cooled butter, as well as vanilla extract (or vanilla sugar), mix everything again.


6. Pour the liquid muffin mixture into the dry ingredients and quickly mix everything with a fork. There is no need to knead the dough for a long time, otherwise it will become too dense and “heavy”; just moisten all the flour. The result is a fairly thick dough.

7. Wash the strawberries and dry them well, cut into small cubes and mix with a tablespoon of flour. Add the berries to the muffin batter and mix gently with a wooden or silicone spatula. If you want to bake muffins with frozen strawberries, you should first defrost them and dry them thoroughly.


8. Divide the dough into portioned molds, filling them 3/4 full, as the muffins will rise during cooking. Silicone molds do not need to be lubricated with anything; it is convenient to additionally insert disposable paper cuffs into them. Sprinkle the tops of the muffins with brown sugar mixed with cinnamon to create a fragrant, crispy crust. From this amount of ingredients I got 14 medium-sized muffins.


9. Bake muffins with strawberries in an oven preheated to 200°C for 20 - 25 minutes until golden brown. Leave the hot muffins in the pan for 5 to 10 minutes, then remove and cool on a wire rack. These cute cupcakes are equally good warm or cold.

Ingredients:
  • 3 eggs

    Muffins with frozen strawberries

    If you want muffins with strawberries in the winter, then such baked goods can also be made from frozen berries. If you don’t have strawberries in your freezer, then you can easily buy such a product in any supermarket in the “Frozen Vegetables and Fruits” section.

    Ingredients:

    • 20 dozen frozen strawberries
    • 1 tbsp. Sahara
    • 3 eggs
    • 1 tsp baking powder
    • 1 tbsp. kefir
    • 1 tbsp. flour

    Cooking method:

  • Mix together granulated sugar, eggs and baking powder. It's best if you do this with a mixer.
  • Then pour kefir into the resulting mass and mix everything thoroughly again.
  • Sift the wheat flour and add to the rest of the ingredients. After mixing, the finished dough should be like thick sour cream.
  • Let two dozen frozen strawberries defrost. After that, drain the water from them, and cut each strawberry into pieces, after which we add them to the dough.
  • Pour the dough into muffin or cupcake molds and place them in an oven preheated to 180 degrees. The baking time for muffins varies around half an hour.

    To be honest, I didn’t intend to write “heavy recipes” like this: the thermometer is already 30 Celsius and I want something lighter, airier and weightless. And I was already planning to switch to diet desserts without baking and ice cream. But I couldn’t resist writing THIS recipe.

    It so happened that I had some strawberries in the refrigerator, completely tasteless, despite the early heat this year. And I decided to somehow put it into action. Since all the supermarkets here in Europe are closed on Sundays (and it was a wonderful Sunday morning), we had to make something, as they say, from what we had. Much to my surprise, I had a complete set of ingredients for the basic muffin dough (if anything, you can look it up) and I immediately remembered the recipe for strawberry muffins with streusel, which I had been wanting to try for 3 years now.

    Fearing that the tasteless strawberries would not bring anything interesting other than moisture to these muffins, I hastened to add a little bit of dark chocolate to them. My muffins turned out quite savory. If you want it sweeter, I advise you to add white or milk chocolate rather than dark chocolate.

    Of course, you can also replace strawberries with raspberries, blueberries and other not very sour berries. Although I have separate recipes for muffins with blueberries and raspberries: 1) and 2).

    In principle, if you don’t want to sweat, then the streusel can be ignored, but in addition to adding an important external appetizing to such a simple dessert as muffins, it also gives the muffins additional sweetness and a cool crunch.

    My strawberry muffins actually turned out incredibly moist, airy, spongy and flavorful. And even the nitrate strawberry began to play in a new way, accompanied by vanilla.

    Well, let's get down to business, shall we?

    For 18 strawberry and chocolate muffins we will need:

    List of products: For muffins:
    • strawberries - 220 gr.
    • chocolate (black, white or milk) - 150 gr.
    • butter, softened - 180 gr.
    • sugar - 150 gr.
    • eggs - 3 pcs.
    • milk 200 ml
    • flour - 380 gr.
    • baking powder - 1 tsp.
    • soda - ½ tsp.
    • salt - 1 whisper
    • vanilla - seeds of 1 pod or 1 tsp essences or vanillin on the tip of a knife
    For the streusel (optional):
    • flour - 50 gr.
    • brown sugar - 40 gr.
    • butter, cold - 30 gr.
    Step-by-step preparation

    Perhaps the most important rule in making muffins: bring all ingredients to room temperature.

    We clean and wash the strawberries and cut them into small pieces. Chop the chocolate with a knife or take ready-made chocolate drops.
    Preheat the oven to 180º. Fill the muffin tin with paper capsules or grease with butter.
    Using a mixer, beat the softened butter and sugar until a white air mass forms (5-10 minutes).
    Add eggs one at a time into the resulting mass: wait until the first egg is completely dissolved and only then add the next one.
    After this, add milk in small portions and beat everything together until smooth.
    In a separate bowl, mix flour with baking powder, soda, salt and vanilla (if you have essence, add it along with milk).
    Sift all the dry ingredients into the bowl with the butter mixture and beat on medium speed for just a few seconds to combine the liquid and dry ingredients.
    Then add chopped strawberries and chocolate, and mix gently with a wooden spoon or silicone spatula.
    Divide the dough into the prepared molds, leaving a gap of about 1 cm from the edges.
    After this, quickly prepare the streusel: put flour, sugar and cold butter in a bowl and rub thoroughly with your hands until fine crumbs similar to bread form.
    Sprinkle each muffin with streusel and bake in the preheated oven for 35-40 minutes.
    Remove the finished muffins from the oven and after 10 minutes remove them from the pan. Transfer to a wire rack to cool completely.
    This year, the picnic season came early, so everyone grab a box of strawberry muffins, a thermos of tea and head out into nature. Moreover, the long and exciting Easter-May holidays are just around the corner.

    • powdered sugar – 150 g;
    • butter – 60 g;
    • eggs – 1 pc.;
    • kefir – 250 ml;
    • soda – 0.5 tsp;
    • baking powder – 2 tsp;
    • jam – 4 tbsp. l.

    Preparation

  • Beat the egg with sugar and butter.
  • Pour in kefir, soda and baking powder.
  • Lay out layers of dough - jam - dough.
  • Bake for 20 minutes.

  • Muffins will taste better if you sprinkle them with powdered sugar; a small strainer will help you do this evenly. Large cupcakes can be decorated using patterned stencils. It’s quick and convenient to prepare baked goods in mugs by placing them in the microwave; you only need to fill them two-thirds full.

    Melt the butter in a saucepan halfway, remove from heat and leave until cool. Then pour into a deep container, add sugar, salt and vanilla sugar. Beat the mass thoroughly with a whisk, add the egg, beat, then add the second egg and beat again until fluffy.

    Pour milk into the dough and stir until the mixture becomes liquid.

    Next, add the flour sifted with baking powder and mix the dough with a spoon.

    Fill the prepared molds two-thirds full with dough. If the molds are silicone, as in my case, then there is no need to grease them. If you use metal ones, then it is better to insert paper inserts into them.

    Wash and dry the strawberries, cut lengthwise into 4-6 pieces. Arrange the strawberries on the surface of the dough, pressing lightly.

    Heat the oven to 180 degrees and bake the muffins for 30-35 minutes. Then remove the cupcakes from the oven and let them cool.

    Remove the finished incredibly delicious strawberry muffins from silicone molds, sprinkle with powdered sugar and serve with any drinks.
